Ingredients

  • 1 bay leaf
  • 0.5 tsp black pepper
  • 2 carrot
  • 2 celery stalk
  • 400 g diced tomatoes
  • 1 tsp dried thyme
  • 3 garlic cloves
  • 1 tsp ground cumin
  • 2 tbsp lemon juice
  • 200 g lentils
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 100 g spinach leaves
  • 2 tbsp tomato paste
  • 1.5 L vegetable broth

Directions

Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add the diced onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are tender, about 10 minutes.
Step 3
Add the minced garlic and tomato paste, and cook for another 2 minutes.
Step 4
Stir in the diced tomatoes, lentils, vegetable broth, bay leaf, cumin, thyme, salt, and pepper. Bring to a boil.
Step 5
Reduce the heat to low and simmer, covered, until the lentils are tender, about 35-40 minutes.
Step 6
Remove the bay leaf and stir in the spinach until wilted.
Step 7
Add the lemon juice and adjust seasoning if necessary.
Step 8
