  • 500 g all-purpose flour
  • 10 g baking powder
  • 2 eggs
  • 200 g granulated sugar
  • 1 lemon zest
  • 60 ml milk
  • 1 g salt
  • 115 g unsalted butter
  • 5 ml vanilla extract

Directions

Step 1
Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Add the softened butter to the dry ingredients and mix until the mixture is crumbly.
Step 4
In a separate bowl, beat the eggs, then add the vanilla extract and lemon zest.

Gradually add the egg mixture to the dry ingredients, mixing until just combined.

Add the milk and mix until the dough comes together.
Step 7
Roll the dough into small balls and place them on the prepared baking sheet.

Flatten each ball slightly with the palm of your hand.

Bake for 10-12 minutes or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
