Ingredients

  • 1 tbsp black pepper
  • 2 tbsp herbes de Provence
  • 2 tbsp kosher salt
  • 4.5 kg prime rib roast

Directions

Step 1
Remove the prime rib from the refrigerator and let it come to room temperature, about 3 hours.
Step 2
Preheat your oven to 260°C (500°F).
Step 3
Generously season the prime rib with kosher salt, black pepper, and herbes de Provence.
Step 4
Place the roast in a roasting pan, fat side up, and insert a meat thermometer into the thickest part of the meat, avoiding bone or fat.
Step 5
Roast in the preheated oven for 15 minutes, then reduce the oven temperature to 135°C (275°F).
Step 6
Continue roasting until the thermometer reads 54°C (130°F) for medium-rare, about 2 to 2.5 hours.
Step 7
Remove the roast from the oven, cover loosely with aluminum foil, and let it rest for at least 20 minutes before carving.
