  • 100 g cake flour
  • 1.5 tsp cream of tartar
  • 12 egg whites
  • 300 g granulated sugar
  • 1 tsp salt
  • 1 tsp vanilla extract

Directions

Step 1
Preheat your oven to 175°C (350°F).

In a large bowl, beat the egg whites until they form soft peaks.

Gradually add the granulated sugar, beating until stiff peaks form.

Sift the cake flour and salt together, then gently fold into the egg white mixture.
Step 5
Add the cream of tartar, vanilla extract, and almond extract, folding gently to combine.
Step 6
Pour the batter into an ungreased angel food cake pan.
Step 7
Bake for 35-40 minutes, or until the cake is golden brown and springs back when lightly touched.

Invert the pan and let the cake cool completely before removing from the pan.
