Directions
Step 1
Preheat the oven to 190°C (375°F).

Slice the eggplants lengthwise into 0.5 cm thick slices and sprinkle with salt. Let them sit for 20 minutes to draw out moisture.

Rinse the eggplant slices and pat dry with paper towels.
Step 4
Heat olive oil in a large skillet over medium heat. Fry the eggplant slices until golden brown on both sides. Drain on paper towels.

In a mixing bowl, combine ricotta cheese, Parmesan cheese, egg, minced garlic, salt, and black pepper.

Spread a thin layer of marinara sauce in a baking dish.

Place a spoonful of the ricotta mixture at one end of each eggplant slice and roll up. Place the rolls seam-side down in the baking dish.
