Directions

Step 1
Pour the heavy cream into a saucepan and heat over medium heat until it reaches 190°F (88°C). Stir occasionally to prevent scorching.

Once the cream reaches the desired temperature, remove it from the heat and stir in the lemon juice.

Allow the mixture to cool to room temperature, then cover and refrigerate for at least 12 hours or overnight.

After the resting period, the mixture should have thickened. Line a sieve with cheesecloth and place it over a bowl.
Step 5
Pour the thickened cream into the cheesecloth-lined sieve and let it drain for about 1-2 hours, or until it reaches the desired consistency.
Step 6
Transfer the mascarpone cheese to an airtight container and store it in the refrigerator until ready to use. It should keep for about a week.
