  • 2 bay leaves
  • 1 bell pepper
  • 0.5 tsp black pepper
  • 500 g black-eyed peas
  • 400 g canned tomatoes
  • 2 stalks celery
  • 1 L chicken broth
  • 2 cloves garlic
  • 1 onion
  • 1 tsp salt
  • 200 g smoked sausage
  • 1 tsp thyme

Directions

Step 1
Rinse the black-eyed peas and soak them in water for at least 6 hours or overnight.
Step 2
Drain and rinse the soaked peas.
Step 3
In a large pot, heat some oil over medium heat and sauté the chopped onion, garlic, bell pepper, and celery until softened.
Step 4
Add the sliced smoked sausage to the pot and cook until browned.
Step 5
Stir in the diced tomatoes, chicken broth, bay leaves, thyme, salt, and black pepper.
Step 6
Add the drained black-eyed peas to the pot and bring to a boil.
Step 7
Reduce the heat and let the mixture simmer for about 1 hour or until the peas are tender.
Step 8
Remove the bay leaves before serving.
Step 9
Serve the black-eyed peas hot, garnished with additional spices or herbs if desired.
