Preheat your oven to 100°C (210°F). Line two baking sheets with parchment paper.

In a clean, dry bowl, beat the egg whites on medium speed until foamy.

Add the cream of tartar and a pinch of salt. Continue to beat until soft peaks form.

Gradually add the sugar, one tablespoon at a time, beating on high until stiff, glossy peaks form and the sugar is completely dissolved.

Fold in the vanilla extract gently.

Using a piping bag or a spoon, place small mounds of meringue onto the prepared baking sheets.

Bake for 1.5 to 2 hours, or until the meringues are dry and can easily be lifted off the parchment paper.

Turn off the oven and let the meringues cool completely in the oven with the door slightly ajar.

Store the meringue cookies in an airtight container at room temperature.
