In a large pot, combine the whole milk, heavy cream, and salt. Heat the mixture over medium heat, stirring occasionally, until it reaches a temperature of 190°F (88°C).

Remove the pot from the heat and add the lemon juice. Stir gently just to combine, then let the mixture sit undisturbed for 5-10 minutes. You will see the curds begin to form.

Line a colander with a clean cheesecloth and place it over a large bowl. Carefully pour the mixture into the cheesecloth-lined colander, allowing the whey to drain into the bowl below.

Let the ricotta cheese drain for about 1-2 hours, depending on how thick you want your cheese to be. The longer it drains, the thicker it will become.
Step 5
