Cut the chicken breast into bite-sized pieces.

In a bowl, mix the chicken pieces with 60g cornstarch until evenly coated.

Beat the egg and add to the chicken, mixing well to coat.

Heat the vegetable oil in a deep frying pan over medium-high heat.

Fry the chicken pieces in batches until golden brown and cooked through. Remove and drain on paper towels.

In a separate pan, heat a little oil and stir-fry the chopped bell pepper and onion until tender.

Add the pineapple chunks to the pan and stir-fry for another minute.

In a bowl, mix the rice vinegar, ketchup, sugar, soy sauce, and 120ml water.

Pour the sauce mixture into the pan with the vegetables and pineapple, bringing it to a boil.

Mix 15g cornstarch with 30ml water to create a slurry, then add it to the boiling sauce to thicken.
