  • 8 slices bacon
  • 0.5 teaspoon black pepper
  • 4 tablespoons butter
  • 2 cups cheddar cheese
  • 0.5 cup green onions
  • 6 russet potatoes
  • 1 teaspoon salt
  • 1.5 cups sour cream

Directions

Step 1
Preheat your oven to 350°F (175°C).
Step 2
Boil the diced potatoes in a large pot of salted water until tender, about 15 minutes. Drain and transfer to a large mixing bowl.

Mash the potatoes with the melted butter, sour cream, salt, and pepper until smooth.

Fold in half of the crumbled bacon, half of the cheese, and half of the green onions into the mashed potatoes.

Spread the potato mixture into a greased 9x13-inch baking dish.
