A traditional Eastern European dumpling filled with a delicious potato and cheese mixture, perfect for a hearty meal.
Directions
Step 1
In a large bowl, mix flour and salt. Create a well in the center and add eggs, sour cream, and melted butter. Mix until a dough forms.
Step 2
Knead the dough on a floured surface until smooth, about 5 minutes. Wrap in plastic wrap and let rest for 30 minutes.
Step 3
Meanwhile, cook potatoes in boiling water until tender. Drain and mash with cheddar cheese and black pepper. Set aside to cool.
Step 4
Roll out the dough to about 1/8 inch thickness on a floured surface. Cut out circles using a glass or cookie cutter.
Step 5
Place a tablespoon of the potato mixture in the center of each circle. Fold over and press the edges to seal.
Step 6
Bring a large pot of salted water to a boil. Cook perogies in batches until they float, about 3-4 minutes. Remove with a slotted spoon.
Step 7
In a skillet, melt 30g of butter and sauté the onions until golden brown. Add the perogies and fry until they are lightly browned and crispy.
Step 8
Serve hot with a dollop of sour cream or your favorite toppings.
