  • 320 g all-purpose flour
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 100 g brown sugar
  • 150 g chocolate chips
  • 2 eggs
  • 200 g granulated sugar
  • 1 tsp ground cinnamon
  • 0.5 tsp salt
  • 60 g unsweetened cocoa powder
  • 2 tsp vanilla extract
  • 120 ml vegetable oil
  • 300 g zucchini

Directions

Step 1
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.

In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and cinnamon.

In another bowl, beat the granulated sugar, brown sugar, and eggs together until smooth. Add the vegetable oil and vanilla extract, and mix well.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the grated zucchini and chocolate chips.
Step 6
Pour the batter into the prepared loaf pan and smooth the top.

Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Step 8
Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
