Prepare a baking sheet by lining it with parchment paper or by greasing it thoroughly.

In a large saucepan, combine the granulated sugar, light corn syrup, and water. Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture comes to a boil.

Attach a candy thermometer to the side of the saucepan. Continue to cook the sugar mixture, without stirring, until it reaches 150°C (300°F).

Remove the saucepan from the heat and immediately stir in the unsalted butter, raw peanuts, baking soda, vanilla extract, and salt. The mixture will bubble up.

Quickly pour the mixture onto the prepared baking sheet and spread it out into an even layer using a spatula.
