Grate the potatoes and onion using a box grater or food processor.

Place the grated potatoes and onion in a kitchen towel and squeeze out as much liquid as possible.

Transfer the potato mixture to a large bowl and add the eggs, flour, salt, and baking powder. Mix until well combined.

Heat the vegetable oil in a large skillet over medium-high heat.

Scoop about 1/4 cup of the potato mixture and flatten it into a patty. Carefully place the patty into the hot oil.

Cook the latkes for 3-4 minutes on each side, or until golden brown and crispy.
