Ingredients

  • 200 ml barbecue sauce
  • 0.5 tsp black pepper
  • 200 g butter beans
  • 500 g chicken breast
  • 1000 ml chicken broth
  • 200 g corn kernels
  • 400 g diced tomatoes
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 500 g pork shoulder
  • 1 tsp salt

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion and minced garlic. Sauté until the onion is translucent.
Step 3
Add the chicken breast and pork shoulder to the pot. Cook until the meat is browned on all sides.
Step 4
Pour in the chicken broth and bring to a boil. Reduce heat and let simmer for 1 hour, or until the meat is tender.
Step 5
Remove the meat from the pot and shred it using two forks.
Step 6
Return the shredded meat to the pot and add the butter beans, corn kernels, diced tomatoes, and barbecue sauce.
Step 7
Season with salt and black pepper. Stir well to combine.
Step 8
Continue to simmer for another 30 minutes, stirring occasionally.
Step 9
Serve hot and enjoy your classic Brunswick stew.
