  • 0.5 cup cilantro
  • 4 garlic cloves
  • 1 green bell pepper
  • 2 tablespoons olive oil
  • 1 onion
  • 1 red bell pepper
  • 1 teaspoon salt
  • 1 tomato

Directions

Step 1
Heat olive oil in a large pan over medium heat.
Step 2
Add chopped onions and cook until translucent, about 5 minutes.
Step 3
Add chopped green and red bell peppers to the pan and cook for another 5 minutes.
Step 4
Stir in minced garlic and cook for 1-2 minutes until fragrant.

Add the chopped tomato and cook for another 5 minutes.
Step 6
Mix in the chopped cilantro, salt, and black pepper.
Step 7
Cook for an additional 2-3 minutes, stirring occasionally.
Step 8
Remove from heat and allow the sofrito to cool. Store in an airtight container in the refrigerator for up to one week.
