  • 4 beets
  • 0.5 teaspoon black pepper
  • 0.5 cups feta cheese
  • 0.5 cups fresh parsley
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 0.5 red onion
  • 1 teaspoon salt

Directions

Step 1
Preheat the oven to 400°F (200°C).
Step 2
Wrap the beets in aluminum foil and place them on a baking sheet.
Step 3
Roast the beets in the preheated oven for 50-60 minutes, or until they are tender when pierced with a fork.
Step 4
Remove the beets from the oven and let them cool slightly before peeling and cutting them into bite-sized pieces.
Step 5
In a large bowl, combine the roasted beets, olive oil, salt, black pepper, red onion, parsley, and lemon juice.
