Ingredients

  • 2.5 tsp active dry yeast
  • 100 g baking soda
  • 60 g butter
  • coarse salt
  • 1 egg
  • 560 g flour
  • 2 tsp salt
  • 1 tbsp sugar
  • 360 ml warm water
  • 1.5 L water

Directions

Step 1
In a large bowl, combine warm water, sugar, and salt. Sprinkle the yeast on top and let it sit for 5 minutes until it becomes foamy.
Step 2
Add the flour and melted butter to the yeast mixture. Mix until combined. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
Step 3
Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
Step 4
Preheat the oven to 450°F (230°C). Line two baking sheets with parchment paper and set aside.
Step 5
In a large pot, bring 10 cups of water and the baking soda to a boil.
Step 6
Divide the dough into 8 equal pieces. Roll each piece into a rope about 24 inches long. Shape each rope into a pretzel by forming a U shape, then crossing the ends over each other and pressing them into the bottom of the U.
Step 7
Place the pretzels one at a time into the boiling water for about 30 seconds. Remove with a slotted spatula and place on the prepared baking sheets.
Step 8
Brush the pretzels with the egg yolk mixture and sprinkle with coarse salt.
Step 9
Bake in the preheated oven for 12-14 minutes, or until golden brown.
Step 10
Remove from oven and let cool on a wire rack before serving.
