Step 1
Scoop the ice cream into 8 equal-sized balls. Place them on a baking sheet and freeze for at least 1 hour until firm.

In a bowl, combine the crushed cornflakes, cinnamon, and sugar.

In another bowl, beat the eggs.
Step 4
Roll each ice cream ball in flour, then dip in beaten eggs, and coat with the cornflakes mixture. Repeat the dipping and coating process if needed.

Return the coated ice cream balls to the freezer for at least 2 hours, or until very firm.

Heat the vegetable oil in a deep fryer or large pot to 190°C (375°F).

Fry the ice cream balls one or two at a time for 10-15 seconds until golden brown. Remove with a slotted spoon and drain on paper towels.
