Directions
Step 1
Wash the lemons thoroughly to remove any wax or pesticides.

Peel the lemons, taking care to avoid the white pith which can make the limoncello bitter.

Place the lemon peels in a large glass jar and pour the vodka over them. Seal the jar tightly.

Let the mixture steep for at least 7 days at room temperature, shaking the jar occasionally.

After 7 days, prepare the simple syrup by heating the water and sugar in a saucepan. Stir until the sugar is completely dissolved. Let it cool to room temperature.

Strain the lemon peels from the vodka and discard the peels.
