Ingredients

  • 1 bell pepper
  • 0.5 cup cheese
  • 6 eggs
  • 0.5 cup milk
  • 1 tbsp olive oil
  • 1 onion
  • 0.5 tsp pepper
  • 0.5 tsp salt
  • 1 cup spinach

Directions

Step 1
Preheat your oven to 375°F (190°C).
Step 2
In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Heat the olive oil in an oven-safe skillet over medium heat. Add the chopped onion and bell pepper, and cook until softened, about 5 minutes.

Add the spinach to the skillet and cook until wilted, about 2 minutes.

Pour the egg mixture into the skillet and cook without stirring for about 2 minutes, until the edges start to set.
Step 6
Sprinkle the shredded cheese evenly over the top of the frittata.
Step 7
Transfer the skillet to the oven and bake for 10-12 minutes, or until the frittata is fully set and slightly golden on top.
Step 8
Remove from the oven and let it cool for a few minutes before slicing and serving.
