Preheat your oven to 400°F (200°C).

Scrub the potatoes clean and pat them dry.

Rub the potatoes with olive oil and sprinkle with salt.

Place the potatoes directly on the oven rack and bake for 50-60 minutes, or until the skins are crispy and a fork easily pierces the potatoes.

While the potatoes are baking, cook the bacon until crispy, then crumble it.

Once the potatoes are done, remove them from the oven and let them cool slightly.

Cut a slit down the center of each potato and fluff the insides with a fork.
