Step 1
Wash and chop the spinach and mustard greens.
Step 2
In a large pot, heat water and blanch the greens for 2-3 minutes, then drain and set aside.

In a blender, puree the blanched greens to a smooth consistency.

Heat the ghee in a large pan over medium heat.
Step 5
Add cumin seeds and let them splutter.

Add chopped onion, garlic, ginger, and green chilies. Sauté until the onion turns golden brown.

Add chopped tomato and cook until it becomes soft and pulpy.

Add turmeric powder and salt, and mix well.
Step 9
Add the pureed greens to the pan and cook for 10-15 minutes, stirring occasionally.

Finally, add garam masala and mix well. Cook for another 2 minutes.

Serve hot with roti or rice.
