Ingredients

  • 4 eggs
  • 150 g pancetta
  • 100 g pecorino romano cheese
  • salt
  • 400 g spaghetti

Directions

Step 1
Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente.
Step 2
While the pasta is cooking, heat a large skillet over medium heat and cook the pancetta until it is crispy.
Step 3
In a bowl, whisk together the eggs, grated Pecorino Romano cheese, and black pepper until well combined.
Step 4
Drain the pasta, reserving a cup of the pasta water.
Step 5
Add the hot pasta to the skillet with the pancetta and toss to combine.
Step 6
Remove the skillet from the heat and quickly pour in the egg and cheese mixture, tossing the pasta continuously to create a creamy sauce. Add reserved pasta water a little at a time if needed to achieve the desired consistency.
Step 7
Season with salt if necessary and serve immediately with extra grated Pecorino Romano cheese and black pepper on top.
