Rompope is a traditional Mexican eggnog, a creamy and spiced drink perfect for festive occasions. It is made with milk, egg yolks, sugar, and flavored with vanilla and cinnamon.

Ingredients

  • 1 g baking soda
  • 1 cinnamon stick
  • 8 egg yolks
  • 120 ml rum
  • 200 g sugar
  • 10 ml vanilla extract
  • 1000 ml whole milk

Directions

Step 1
In a large pot, heat the milk with the cinnamon stick over medium heat until it starts to simmer. Do not let it boil.
Step 2
In a separate bowl, whisk the egg yolks and sugar together until well combined.
Step 3
Slowly add a ladle of the hot milk to the egg mixture, whisking constantly to temper the eggs.
Step 4
Slowly pour the egg mixture back into the pot with the rest of the milk, stirring constantly.
Step 5
Continue to cook over medium-low heat, stirring constantly until the mixture thickens slightly, about 15 minutes.
Step 6
Remove from heat and stir in the vanilla extract, rum, and baking soda.
Step 7
Let the rompope cool to room temperature, then transfer to a bottle or jar and refrigerate until chilled.
Step 8
Serve chilled, and shake well before serving.
