Ingredients

  • 0.5 tsp black pepper
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 0.5 cup lemon juice
  • 0.5 cup olive oil
  • 0.5 cup parsley
  • 1 cup quinoa
  • 1 red bell pepper
  • 0.5 red onion
  • 1 tsp salt
  • 2 cups water

Directions

Step 1
Rinse the quinoa under cold water.
Step 2
In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes, or until water is absorbed. Remove from heat and let cool.
Step 3
In a large bowl, combine the cooked quinoa, cucumber, cherry tomatoes, red bell pepper, red onion, and parsley.
Step 4
In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.

Pour the dressing over the quinoa mixture and toss to combine.
