Classic Fresh Pumpkin Pie

  • 50 g brown sugar
  • 2 eggs
  • 350 ml evaporated milk
  • 500 g fresh pumpkin
  • 1 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.5 tsp ground nutmeg
  • 1 pie crust
  • 0.5 tsp salt
  • 150 g sugar
  • 1 tsp vanilla extract

Directions

Step 1
Preheat the oven to 350°F (175°C).
Step 2
Place the peeled and cubed pumpkin in a large pot and cover with water. Bring to a boil and cook until tender, about 20 minutes. Drain and let cool.
Step 3
Puree the cooked pumpkin in a food processor or blender until smooth.
Step 4
In a large bowl, combine the pumpkin puree, sugar, brown sugar, cinnamon, ginger, nutmeg, and salt. Mix well.
Step 5
Beat the eggs in a separate bowl, then add to the pumpkin mixture. Stir in the evaporated milk and vanilla extract until fully combined.
Step 6
Pour the pumpkin mixture into the prepared pie crust.
Step 7
Bake in the preheated oven for 60 minutes, or until a knife inserted into the center comes out clean.
Step 8
Let the pie cool on a wire rack. Serve chilled or at room temperature.
