  • 455 g all-purpose flour
  • 15 g baking powder
  • 5 g baking soda
  • 170 g butter
  • 475 ml buttermilk
  • 5 g salt

Directions

Step 1
Preheat the oven to 220°C (425°F).
Step 2
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Add the cold butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
Step 4
Make a well in the center of the flour mixture and pour in the cold buttermilk. Stir until just combined. Do not overmix.
Step 5
Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat the dough into a rectangle about 1-inch thick.
Step 6
Use a biscuit cutter to cut out biscuits and place them on a baking sheet lined with parchment paper. Re-roll the scraps and cut out additional biscuits.
Step 7
Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown.
Step 8
Remove from the oven and let cool slightly before serving.
