  • 8 slices bacon
  • 0.5 cup butter
  • 1.5 cups cheddar cheese
  • 4 cups chicken broth
  • 8 oz cream cheese
  • 3 cloves garlic
  • 0.5 cup green onions
  • 2 cups milk
  • 1 onion
  • 0.5 tsp pepper
  • 6 potatoes
  • 1 tsp salt

Directions

Step 1
Add diced potatoes, onion, and garlic to the slow cooker.
Step 2
Pour in chicken broth and add butter. Stir to combine.
Step 3
Cover and cook on low for 6-7 hours or on high for 3-4 hours until potatoes are tender.
Step 4
Once potatoes are tender, use a potato masher to mash them to your desired consistency.

Stir in softened cream cheese, shredded cheddar cheese, and milk. Mix until cheeses are melted and soup is creamy.

Season with salt and pepper to taste.
