Step 1
Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and cook until translucent, about 5 minutes.

Stir in the minced garlic and cook for another minute.

Add the rice and cook, stirring frequently, until the rice is lightly toasted, about 3-4 minutes.

Pour in the chicken broth and bring to a boil.

Stir in the diced carrot, salt, and pepper.

Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
