  • 1 pinch cayenne pepper
  • 3 egg yolks
  • 1 tbsp lemon juice
  • 1 pinch salt
  • 113 g unsalted butter
  • 1 tbsp water

Directions

Step 1
Fill a medium saucepan with a few inches of water and bring to a simmer over medium heat.

In a heatproof bowl, whisk together the egg yolks, lemon juice, and water.

Place the bowl over the simmering water, ensuring the bowl does not touch the water.
Step 4
Whisk constantly until the mixture thickens and doubles in volume, about 3-5 minutes.
Step 5
Remove the bowl from heat and slowly drizzle in the melted butter while whisking continuously.
Step 6
Whisk in the salt and cayenne pepper, adjusting seasoning to taste.
Step 7
Serve immediately or keep warm by placing the bowl over a pot of warm water, stirring occasionally.
