Directions
Step 1
Cut the fresh fish fillets into small, bite-sized pieces and place them in a large glass or ceramic bowl.
Step 2
Pour the fresh lime juice and lemon juice over the fish, making sure all pieces are submerged. Cover the bowl and refrigerate for about 30 minutes to 1 hour, or until the fish turns opaque.
Step 3
Once the fish is 'cooked' by the citrus juices, drain off most of the juice, leaving just a little to keep the fish moist.
Step 4
Add the diced tomatoes, chopped red onion, chopped cilantro, finely chopped jalapeno (if using), diced cucumber, and diced avocado to the bowl with the fish.
Step 5
Season with salt and black pepper. Stir gently to combine all ingredients.
Step 6
Cover and refrigerate for another 20-30 minutes to allow flavors to meld.
Step 7
Serve the ceviche chilled, with tortilla chips or on tostadas.
