Ingredients

  • 1 bell pepper
  • 400 g black beans
  • 0.5 tsp black pepper
  • 0.5 cup cilantro
  • 1 tsp coriander
  • 1 tsp cumin
  • 3 cloves garlic
  • 1 lime
  • 2 tbsp olive oil
  • 1 onion
  • 200 g rice
  • 1 tsp salt
  • 400 ml vegetable broth

Directions

Step 1
Heat the olive oil in a large pan over medium heat.
Step 2
Add the chopped onion and bell pepper to the pan and cook until softened, about 5 minutes.
Step 3
Stir in the minced garlic, ground cumin, and ground coriander. Cook for another minute until fragrant.
Step 4
Add the rice to the pan and stir to coat with the spices and oil.
Step 5
Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 18-20 minutes, until the rice is cooked.
Step 6
Stir in the black beans, salt, and black pepper. Cook for another 5 minutes until heated through.
Step 7
Remove from heat and stir in the lime juice and chopped cilantro.
Step 8
Serve hot and enjoy!
