Directions
Step 1
In a large bowl, combine flour, salt, and 2 tablespoons sugar. Cut in the butter until the mixture resembles coarse crumbs.

Stir in ice water, a tablespoon at a time, until the dough forms a ball. Divide dough in half and shape into discs. Wrap in plastic wrap and refrigerate for at least 1 hour.

Preheat oven to 220°C (425°F). Roll out one disc of dough on a floured surface to fit a 9-inch pie plate. Place the crust in the pie plate and trim the edges.
Step 4
In a large bowl, combine peaches, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, and lemon juice. Pour into the crust.

Roll out the second disc of dough and place it over the filling. Trim, seal, and flute the edges. Cut slits in the top crust for steam to escape.

Brush the top crust with beaten egg and sprinkle with coarse sugar.
