These delicious chicken croquettes are a great way to use up leftover chicken. They are crispy on the outside and tender on the inside, perfect as an appetizer or main dish.

Ingredients

  • 0.5 tsp black pepper
  • 100 g breadcrumbs
  • 1 egg
  • 2 cloves garlic
  • 300 g leftover chicken
  • 200 ml oil
  • 1 onion
  • 2 tbsp parsley
  • 250 g potatoes
  • 0.5 tsp salt

Directions

Step 1
Shred or finely chop the leftover chicken.
Step 2
Mash the boiled potatoes in a large bowl.
Step 3
Add the chopped onion, minced garlic, chopped parsley, salt, pepper, and shredded chicken to the mashed potatoes. Mix well.
Step 4
Shape the mixture into small patties or croquettes.
Step 5
Dip each croquette into the beaten egg, then coat with breadcrumbs.
Step 6
Heat oil in a frying pan over medium heat.
Step 7
Fry the croquettes until golden brown and crispy on both sides, about 3-4 minutes per side.
Step 8
Drain on paper towels and serve hot.
