  • 25 g almonds
  • 75 ml brandy
  • 110 g breadcrumbs
  • 110 g brown sugar
  • 225 g currants
  • 150 ml dark beer
  • 2 eggs
  • 110 g flour
  • 1 lemon zest
  • 110 g mixed peel
  • 1 tsp nutmeg
  • 1 orange zest
  • 225 g raisins
  • 2 tsp spice mix
  • 110 g suet
  • 225 g sultanas

Directions

Step 1
In a large mixing bowl, combine the raisins, currants, sultanas, and mixed peel.
Step 2
Add the flour, breadcrumbs, suet, brown sugar, chopped almonds, mixed spice, and nutmeg, mixing well.
Step 3
Stir in the lemon and orange zest.
Step 4
In a separate bowl, beat the eggs and add the brandy and stout or dark beer.
Step 5
Pour the liquid mixture into the dry ingredients and mix thoroughly.
Step 6
Spoon the mixture into a greased pudding basin, pressing down firmly.
Step 7
Cover with a double layer of greased parchment paper and a layer of foil, securing with string.
Step 8
Place the basin in a large saucepan and pour in boiling water halfway up the sides of the basin.
Step 9
Cover and steam for 6 hours, topping up with boiling water as necessary.
Step 10
Remove from the saucepan and let cool. Store in a cool, dry place until Christmas.
Step 11
To reheat, steam for 2 hours before serving.
