A comforting and delicious casserole made with fresh squash, perfect for family gatherings or as a side dish.
Directions
Step 1
Preheat oven to 350°F (175°C).
Step 2
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced squash and chopped onion, and cook until tender, about 5 minutes. Drain any excess liquid.

In a large bowl, combine the cooked squash and onion with the beaten egg, milk, shredded cheddar cheese, salt, and pepper. Mix well.

Transfer the mixture to a greased 9x13-inch baking dish.

In a small bowl, melt the remaining 2 tablespoons of butter and mix with the bread crumbs. Sprinkle this mixture evenly over the top of the casserole.

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbling.
