Ingredients

  • 2 carrots
  • 2 eggs
  • 3 cloves garlic
  • 2 green onions
  • 150 g peas
  • 300 g rice
  • 1 tsp sesame oil
  • 450 g shrimp
  • 3 tbsp soy sauce
  • 2 tbsp vegetable oil

Directions

Step 1
Heat 1 tbsp of vegetable oil in a large skillet over medium-high heat.
Step 2
Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove from the skillet and set aside.
Step 3
In the same skillet, add another 1 tbsp of vegetable oil. Add the diced carrots, peas, and minced garlic. Cook until the vegetables are tender, about 5 minutes.
Step 4
Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
Step 5
Add the cooked rice to the skillet and stir everything together. Pour in the soy sauce and sesame oil, stirring to combine.
Step 6
Return the cooked shrimp to the skillet and mix well. Cook for an additional 2-3 minutes, until everything is heated through.
Step 7
Garnish with chopped green onions and serve immediately.
