Grate the zucchinis and place them in a colander. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture.

After 10 minutes, squeeze the grated zucchini to remove as much water as possible.

In a large bowl, combine the grated zucchini, beaten egg, flour, Parmesan cheese, chopped onion, salt, and pepper. Mix well until all ingredients are evenly distributed.

Heat olive oil in a large skillet over medium heat.

Scoop about 2 tablespoons of the zucchini mixture and form into a patty. Place in the skillet. Repeat with remaining mixture.
