This traditional Ukrainian Red Borscht soup is a hearty and flavorful beet soup made with cabbage, potatoes, and various vegetables, perfect for a comforting meal.

Heat the vegetable oil in a large pot over medium heat.

Add the onion and garlic, and cook until softened, about 5 minutes.

Stir in the tomato paste and cook for another 2 minutes.

Add the beets, carrots, and potatoes to the pot, and stir to combine.

Pour in the vegetable broth and add the bay leaves. Bring to a boil.
