Ingredients

  • 2 bay leaf
  • 4 beets
  • 0.5 teaspoons black pepper
  • 0.5 cabbage
  • 2 carrots
  • 2 tablespoons dill
  • 2 cloves garlic
  • 1 onion
  • 3 potatoes
  • 1 teaspoons salt
  • 1 cup sour cream
  • 3 tablespoons tomato paste
  • 8 cups vegetable broth
  • 3 tablespoons vegetable oil

Directions

Step 1
Heat the vegetable oil in a large pot over medium heat.
Step 2
Add the onion and garlic, and cook until softened, about 5 minutes.

Stir in the tomato paste and cook for another 2 minutes.
Step 4
Add the beets, carrots, and potatoes to the pot, and stir to combine.

Pour in the vegetable broth and add the bay leaves. Bring to a boil.

Once boiling, reduce the heat and simmer for about 20 minutes, or until the vegetables are tender.

Add the shredded cabbage and season with salt and black pepper. Continue to simmer for another 10 minutes.

Remove the bay leaves and stir in the fresh dill.

Serve the borscht hot, with a dollop of sour cream on top.
