  • 240 g creamy peanut butter
  • 480 g powdered sugar
  • 340 g semi-sweet chocolate chips
  • 115 g unsalted butter
  • 30 g vegetable shortening

Directions

Step 1
In a large bowl, mix together the peanut butter, unsalted butter, and powdered sugar until smooth.
Step 2
Shape the mixture into 1-inch balls and place them on a baking sheet lined with wax paper. Refrigerate for 30 minutes.
Step 3
In a microwave-safe bowl, melt the semi-sweet chocolate chips and vegetable shortening in 30-second intervals, stirring after each interval until smooth.
Step 4
Using a toothpick, dip each peanut butter ball into the melted chocolate, leaving a small portion of the peanut butter visible at the top. Place back on the wax paper.
Step 5
Refrigerate the dipped buckeyes for an additional 30 minutes or until the chocolate is set.
