Lomo Saltado is a popular Peruvian stir-fry dish combining marinated strips of sirloin with onions, tomatoes, and other ingredients, typically served with fried potatoes and rice.

Ingredients

  • 0.5 tsp black pepper
  • 20 g cilantro
  • 3 cloves garlic
  • 3 potato
  • 1 red onion
  • 30 ml red wine vinegar
  • 200 g rice
  • 1 tsp salt
  • 500 g sirloin steak
  • 60 ml soy sauce
  • 2 tomato
  • 100 ml vegetable oil
  • 1 yellow chili pepper

Directions

Step 1
Marinate the sirloin steak strips with soy sauce, red wine vinegar, and minced garlic for at least 15 minutes.
Step 2
Heat vegetable oil in a large skillet over high heat.
Step 3
Fry the marinated steak strips until they are browned, then remove from the skillet and set aside.
Step 4
In the same skillet, add the sliced onions, tomatoes, and yellow chili pepper. Cook until the onions are translucent.
Step 5
Return the steak to the skillet and mix well with the vegetables.
Step 6
Season with salt and black pepper.
Step 7
Add chopped cilantro and stir to combine.
Step 8
Serve the Lomo Saltado with fried potatoes and cooked rice on the side.
