Classic Eggplant Parmesan

Ingredients

  • 0.5 cup basil
  • 2 cups breadcrumbs
  • 2 eggplant
  • 3 eggs
  • 1 cup flour
  • 4 cups marinara sauce
  • 2 cups mozzarella cheese
  • 0.5 cup olive oil
  • 1 cup parmesan cheese
  • 1 tablespoon salt

Directions

Step 1
Preheat the oven to 375°F (190°C).
Step 2
Slice the eggplants into 1/4-inch thick rounds and sprinkle both sides with salt. Let them sit for 30 minutes to draw out the moisture.
Step 3
Rinse the eggplant slices with water and pat them dry with paper towels.
Step 4
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with half of the Parmesan cheese.
Step 5
Dip each eggplant slice in the flour, then the eggs, and finally the breadcrumb mixture.
Step 6
Heat olive oil in a large skillet over medium heat and fry the breaded eggplant slices until golden brown on both sides. Drain on paper towels.
Step 7
Spread a layer of marinara sauce in the bottom of a baking dish. Arrange a layer of eggplant slices on top of the sauce.
Step 8
Sprinkle with mozzarella cheese and Parmesan cheese. Repeat the layers until all the ingredients are used, finishing with a layer of cheese on top.
Step 9
Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
Step 10
Garnish with fresh basil leaves before serving.
