Pupusas are a traditional Salvadoran dish made of thick corn tortillas that are typically stuffed with a savory filling such as cheese, beans, or meat. They are served with curtido (a pickled cabbage slaw) and salsa roja.
Directions
Step 1
In a large bowl, combine masa harina and salt.

Gradually add water, mixing with your hands until a dough forms. The dough should be moist but not sticky.

Divide the dough into 12 equal portions and roll each portion into a ball.

Flatten each ball into a disk about 1/4 inch thick.
Step 5
Place a tablespoon of refried beans and a tablespoon of cheese in the center of each disk.
Step 6
Fold the dough over the filling and press the edges to seal. Flatten gently to form a thick disk.
Step 7
Heat a non-stick skillet or griddle over medium heat.
Step 8
Cook each pupusa for about 3-4 minutes on each side, or until golden brown and cooked through.
Step 9
Serve hot with curtido and salsa roja.
