Directions
Step 1
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the sliced pork and cook until browned, about 5 minutes. Remove from skillet and set aside.

In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and cook until fragrant, about 30 seconds.

Add the frozen peas and carrots, and cook for 2-3 minutes until they are tender.

Push the vegetables to the side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
