  • 2 tsp black pepper
  • 200 g Pecorino Romano cheese
  • 1 tsp salt
  • 400 g spaghetti

Directions

Step 1
Bring a large pot of salted water to a boil.

Cook the spaghetti until al dente, according to package instructions.

Meanwhile, finely grate the Pecorino Romano cheese.

In a large skillet, toast the freshly ground black pepper over medium heat for about 1 minute.

Reserve about 1 cup of the pasta cooking water, then drain the spaghetti.

Add the hot pasta to the skillet with the toasted pepper.

Sprinkle the grated Pecorino Romano cheese over the pasta.
Step 8
Gradually add the reserved pasta water, tossing the pasta continuously until the cheese melts and forms a creamy sauce.

Serve immediately, garnished with additional black pepper if desired.
