Classic Potato Pancakes

These savory potato pancakes are crispy on the outside and tender on the inside. They make a perfect side dish or a delicious snack.

Ingredients

  • 2 eggs
  • 3 tbsp flour
  • 0.5 cup oil
  • 1 onion
  • 0.5 tsp pepper
  • 4 potatoes
  • 1 tsp salt

Directions

Step 1
Peel and grate the potatoes and onion. Place them in a strainer and press out as much liquid as possible.
Step 2
In a large bowl, combine the grated potatoes and onion with the eggs, flour, salt, and pepper. Mix well.
Step 3
Heat the vegetable oil in a large skillet over medium-high heat.
Step 4
Spoon the potato mixture into the hot oil, flattening each pancake with the back of the spoon. Cook until golden brown, about 3-4 minutes on each side.
Step 5
Remove the pancakes from the skillet and drain on paper towels. Serve hot.
