  • 60 ml apple cider vinegar
  • 2 bay leaves
  • 500 ml beef broth
  • 1.5 kg beef chuck roast
  • 200 g cheese
  • 12 corn tortillas
  • 3 dried ancho chiles
  • 4 dried guajillo chiles
  • 5 g dried oregano
  • 2 dried pasilla chiles
  • 1 bunch fresh cilantro
  • 5 garlic cloves
  • 5 g ground cumin
  • 2 lime
  • 10 g salt
  • 1 white onion

Directions

Step 1
Remove stems and seeds from the chiles. Toast them in a dry skillet over medium heat until fragrant.
Step 2
Soak the toasted chiles in hot water for 15 minutes until they soften.
Step 3
In a blender, combine the soaked chiles, chopped onion, garlic cloves, apple cider vinegar, and 250 ml of beef broth. Blend until smooth.
Step 4
Cut the beef chuck roast into large chunks and place them in a large pot.
Step 5
Pour the chile sauce over the beef. Add the remaining beef broth, bay leaves, ground cumin, dried oregano, and salt.
Step 6
Bring the mixture to a boil, then reduce heat to low and simmer for 3 hours or until the beef is tender and easily shredded.
Step 7
Remove the beef from the pot and shred it with forks. Reserve the broth for dipping.
Step 8
Heat the corn tortillas in a skillet. Add shredded beef and cheese to each tortilla and fold them in half.
Step 9
Cook the folded tortillas in the skillet until the cheese melts and the tortillas are crispy.
Step 10
Serve the tacos with fresh cilantro, lime wedges, and a side of the reserved broth for dipping.
