Ingredients

  • 1 apple
  • 0.5 tsp black pepper
  • 2 tbsp butter
  • 1 carrot
  • 1 celery stalk
  • 2 chicken breasts
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 1 tbsp curry powder
  • 2 garlic cloves
  • 1 tbsp lemon juice
  • 1 onion
  • 0.5 cup rice
  • 1 tsp salt

Directions

Step 1
Melt the butter in a large pot over medium heat.
Step 2
Add the chopped onion, garlic, carrot, celery, and apple. Cook until the vegetables are tender.
Step 3
Add the diced chicken breasts and curry powder. Cook until the chicken is browned.
Step 4
Pour in the chicken broth and bring to a boil.
Step 5
Add the rice, reduce heat to low, and simmer until the rice is cooked.
Step 6
Stir in the coconut milk, salt, and black pepper. Simmer for another 5 minutes.
Step 7
Add the lemon juice just before serving. Stir well and serve hot.
