Directions
Step 1
Melt the butter in a large pot over medium heat.

Add the chopped onion, garlic, carrot, celery, and apple. Cook until the vegetables are tender.

Add the diced chicken breasts and curry powder. Cook until the chicken is browned.

Pour in the chicken broth and bring to a boil.

Add the rice, reduce heat to low, and simmer until the rice is cooked.
